Sweeter and more tender than red beets, Touchstone’s brilliant yellow root holds their color when cooked with delectable yellow-stemmed greens. Yellow beets tend to germinate less, especially in cool soils, compared to red beets. At Fruition, we plant ours in late May/early June and again every few weeks for successions of roots all summer long with our final succession for winter storage sown in early August. Organic Touchstone Gold Beet roots can get over 2 pounds and still remain tender when thinned and watered well!
