50 days to harvest Portulacaceae

We have always been fond of eating our weeds, but friends this is not your average weed: succulent and lemony with the most Omega-3’s of any vegetable, purslane was a favorite green of both Gandhi and Thoreau. Organic Golden Purslane grows 18 inches upright while its ancestral garden weed crawls prostrate along the ground, making abundant harvests easier to clean. In the kitchen we mostly enjoy the leaves in salads but once the plant begins to flower we harvest the entire stalk and blanch the leaves for a pasta alternative that perfectly coincides with the first tomato harvest.
