Description Planting Instructions

Organic Italy Hill Giant Ivory has been grown in the Finger Lakes for over 60 years & we are thrilled to share it with you! Our 2018 favorite for pesto, these massive ivory bulbs with massive, easy to peel cloves have rich, full garlic flavor with a depth rarely present in Porcelain varieties. They store well into the winter, as well.

Average 28 cloves per pound.

“Porcelain” varieties are hardnecks throwing scapes in June just before bulb harvest. Bulbs are typically large and bright white (inspiring the name ‘Porcelain”) although purple or copper streaking often appears depending on growing conditions. Bulbs average 4-6 exceptionally large cloves, each skin ranging from yellowish-tan to brown to reddish-purple in both background and streaking. Cloves are easy to peel. As a group, Porcelains are among the highest yields of allicin, the sulfur compound most associated with garlic’s therapeutic benefits. As a result, they are often more pungent and unsubtle and lack the flavor complexity and depth found in Purple Stripes. Nonetheless, they work well for any dish that calls for assertive garlic flavor. Also, Porcelains (more than any other hardneck) set larger bulbs when their scapes are removed.

As usual the garlic I purchased has been doing  fantastic.   The garlic stalks on this years planting are huge and plants are looking better than last years. I am thankful not only for the great bulbs, but also for the help from Petra. I have learned so much and am grateful.
