We’ve been saving them since, enraptured by their lovely length (they are such a pleasure to prepare in the kitchen) as well as their savory sweetness that deepens as they store, all winter long, in our cellar.

May be my favorite crop this year! August 17, 2018

These shallots are amazing--they grew huge, quickly. I wish I had planted more than the 200 I did! They are delicious fresh, and will be harvesting the rest this weekend for curing. I don't even want to sell them, just eat them all myself!
