A modern selection of an Italian heirloom, Chioggia’s concentric rings of red and white are sweeter than classic red beets and maintain their fabulous colors when cooked. We love to eat these Organic Chioggia Guardsmark Beets roasted as thin slices drizzled with butternut squash seed oil, salt and sumac.

Organic Chioggia Guardsmark Beet
Direct Sow (recommended): First sow when soil has warmed to 45F, often 4 weeks before last frost, in rows 12-18” apart. Thin to 3” between roots, enjoying both greens & small beets as you thin. Sow every 2 weeks (until 8 weeks before first frost is expected) for a continuous supply throughout the season.

Seed Depth: 1/2 inch

These Chioggia beets are wonderful. They germinate well and relatively quickly (unlike my slow starting golden beets). However, the real deal is the tenderness and flavor combination. I’m not a fan of a very strong beet flavor, and these pretty babies have just the right mix of mildness and earthiness to satisfy my palette. Also, my having left them in the ground much longer than I should have did not have a negative impact on them – they never became tough or woody. I will definitely be growing these beets again next season.
