Organic Spinach

So hardy and so succulent, spinach gets us through the winter here at Fruition Seeds. Impressively adapted for short seasons, our spinach often overwinters uncovered in our fields here in Zone 5. Classic spinach germinates best and remains delicious longest in the cool soils of spring and fall; we sow spinach March through early May, resisting to sow again 'til early September. Those September-sown seeds often overwinter without hesitation, especially with hoops and floating row cover amplifying their abundance as well as resilience. If you’re wondering what to sow in the heat of summer, sow Asian spinach, also known as tatsoi! Remarkably similar in both texture and flavor, Asian spinach thrives in warm as well as cool soils, perfect for sowing anytime from spring snow melt through September.
