Transcript: When we grow things like beets, we expected that we’ll have to thin them. Sometimes we actually thin our garlic as well. And that’s because imagine the garlic you plant in the fall–you’re planting one single clove of garlic and in the cold of the winter, that’s driving that apical blub inward, splintering it into however many pieces that then ultimately turned into all the cloves that become the bulb of the next season. And that’s how we go from one single club into an entire bulb of garlic.

Sometimes, they form not just one ball, but two. And in that case, it’s really important that you remove them remove the smaller of the two bulbs that are growing right next to each other, because they’re out competing each other and stressing each other out. If you’re reducing, taking away that one smaller, and one will certainly be smaller than the other most of the time, then you’re ensuring that that one remaining bulb will be that much bigger that much happier that much healthier.

So here are all of these bulbs I just removed. It’s mid June, and I just removed these were all seconds. So some of them are very small. It’s almost like a scallion but others of them are really quite large. So this was growing literally right next to an even bigger bulb. And so I just pulled it up and I’m going to be eating these friends and peel them back. You’ll find green garlic inside and it is so juicy, it is so potent. It’s really delicious. And you’ll find lots of the stem is edible. All these leaves are also edible.

So by all means, check out your garlic, and if there’s two growing right next to each other, be sure to thin them down to the strongest, happiest healthiest one, and that one remaining will be that much larger as a result.
