Transcript: I remember we were making ratatouille once when I was a girl. And I was peeling shallot after shallot after shallot for it. And finally I was like Mom, do I have to peel another shallot because I was going and just peeling them back and peeling them back and it was kind of awkward and not my cup of most fun tea. And I was so thrilled, just a handful of years ago and Brian and Christina Uprising Seeds in Washington. They are wonderful friends and they gifted us with the brilliant key when you’re opening them up and actually in the kitchen to enjoy an eat. Simply cut them across with a knife in half bisect them, and then they pop right out of their skins, and they’re delightfully easy to process after that. So I definitely made way more of a process than I ever needed to as a girl. And I hope that this little tip encourages you to grow and eat all the more shallots in your life and perhaps it will bring you happiness as it has me in which case I can’t think of a higher reason to get out of bed in the morning.
