Organic Star’s Favorite Dahlia
Each delectable bloom is massive, lotus-like as countless petals unfurl on long, strong stems perfect as a single bloom or in a bouquet. Her petals taste like soft, floral lettuce with scrumptious starchy tubers, like mild potatoes.
It’s true! Dahlias were domesticated 2000 years ago as a food crop in Mexico. Fast-forward to 200 years ago: The Victorian era selected them for floral rather than culinary traits, so though all are technically ‘edible,’ few are truly delectable. We’ve trialed (and tasted!) hundreds of varieties and we’ve found three such delicacies: Star’s Favorite, Fern Cliff and Kasagi. We enjoy them both as salad, like brilliant buttercrunch lettuce, as well as juicy tubers, like mild potatoes. Dahlia latkes! They are the most delightfully crunchy kimchi ingredient we’ve found.
