Such a classic dry bean for so many good reasons! First, we can't help but smile when we see their bright yin-yangs, each one gorgeously unique. Second, they're one of the easiest beans to grow: Simply sow them after final frost and, with a touch of cultivation, you don't harvest their compact, abundant pods until they're golden brown and full of large, lovely dry beans. Calypso's flavor is mild as they melt in your mouth. Remarkably, the black and white pigments are maintained in cooking, rather than becoming a mute gray!
