Butternut Squash Seed Oil Stony Brook is a visionary company we collaborate with here in the Finger Lakes. Making incredibly delicious and impressively nutritious oils from regionally grown and freshly pressed winter squash seeds, they are brilliantly value-adding the by-product (seeds!) of the ready-to-cook packages of butternut squash in our regional grocery stores.

Butternut Squash Seed Oil is one of our favorite regional foods. It is exceptionally rich and nutty with a buttery, almost peanut character that compliments a wide range of flavors. Its smoke point is similar to butter (425 F) with a fraction of the saturated fat of butter, making it versatile in the kitchen, as well. Drizzled on salads, roasted with brussels sprouts, grilled with shrimp and baked into banana bread: there are dozens of ways we use this squash seed oil and we delight in constantly discovering with new combinations. (One day we poured it on chocolate coconut ice cream...it was not the last day.) For those with nut allergies it brings roasted, rich nut flavor and nutrition to your plate.

This oil contains only one ingredient: simply the oil from regionally grown, roasted and cold-pressed butternut squash seeds.

It has a shelf life of five months opened on the shelf and twice as long in the fridge, though that's largely unnecessary: we enjoy 2-3 bottles a month!

love this oil so much - use it for cooking cauli-rice (cauliflower riced) mostly. Can find it at Wegmans
