Organic Polish Amaranth HEIRLOOM Our favorite amaranth for salads! Its vivid magenta young leaves have a remarkable spinach-like flavor that has become popular as micro and baby greens. Amaranth grows brilliantly in summer when true spinach would either not germinate or bolt in a flash; amaranth also grows beautifully in the winter even on window sills. The best, most tender and mild salad greens are harvested when the plant has less than a ten leaves; we sow a few feet every two weeks all season for continual harvest of the highest quality salad greens.

Polish amaranth is a dramatic ornamental that rises over 5 feet tall with dramatic deep purple drooping seed heads that sway with every breeze. The large central and numerous smaller secondary seedheads make striking centers and sides for bouquets.

We grow Polish amaranth for bright magenta micro and baby greens from October through April indoors.
