Organic Garden Cress We love cress for its peppery punch and bright succulence that brings alive salads, sandwiches, sushi and soups. "It tastes like cinnanmon hot-shot candies!" our friend Eva (age 7) exclaimed with glee. It grows best in the cool seasons and even overwinters well in our climate so it feeds us when we're most grateful for its green leaves. In gardens, in containers and even on windowsills in the winter Cress leaps out of the ground and we generally eat it within two weeks as a tender micro or baby green. We find its flavor is most balanced at that stage; the longer Cress grows the hotter it gets.
